Hearty Chic Peas & Sausage
1 pound dried Garbanzo Beans
1/4 t ground cloves
1/4 t ground cinnamon
1 bay leaf
1/4 cup extra-virgin Olive Oil
1 pound Mountain Sunshine Farms Hot Pork Sausage
1 small yellow onion, minced
3 cloves garlic, minced
salt & pepper
1/2 cup coarsely grated Sharp Cheddar Cheese
Place presoaked peas in a large pot with cloves, cinnamon & enough water to cover peas by two inches.
Enclose parsley stems, thyme and bay leaf in cheesecloth or teaball and place in water.
Bring mixture to a boil, reduce heat and simmer, uncovered, until the peas are tender, 45-65 minutes.
Reduce heat to low and cover.
Brown the sausage with onion & garlic. When cooked, add to pot. Simmer gently, uncovered for about 60 minutes.
Add water if peas begin to dry out.
Serve hot, sprinkled with cheese.
