1 pound dried Lima Beans
3 T Amish Butter
1-1/2 t salt
1 bay leaf
salt & pepper
parsley or pimento
Place presoaked beans in a large pot with 4 cups of water. Bring to a boil.
Reduce heat and simmer gently until soft, 30-40 minutes. Liquid should be
evaporated to a thin, gravy-like consistency. Add butter, salt (if desired)
and pepper to taste. Serve hot. Add a sprinkling of chopped parsley, pimento,
or paprika for color.
